Mounting (Landscape or Portrait) and more

I have an IPhone 5S 64G, and plan to take HD video at a 2 track event for 30min runs for a total of 8 runs during the event.
1) Is it best to mount IPhone landscape or Portrait to gain the best performance on g-force or other benefits?
2) If I "start driving" in the main menu and it puts me in 'racer mode" then I hit the "Video Button" if I "Record Now" and hit the "X" in portrait it goes to "Racer View" which I like but in portrait it goes only to map view?
3) Can I do IPhone 5S and Go Pro and get to Racer mode in Landscape?
4) Is there an external MIC option you recommend via bluetooth that can be used to pick up at the rear number exhaust and engine?
5) I plan to be at 7 different tracks this year and will export all the data to dropbox. Next year when I revisit a track can I reimport to HLT the data to a specific track to my iPhone so I can compare all the track data?
6) What is the best way to push all the data, CSV, files, video, off the iPhone to another storage device after a track weekend? In other words, how can I archive date the best way??? For example should I overlay first?
