I saw in the google play sotre that there is now a fix for the Andorid >10 issue with not being able to access the Android>data>harrys.laptimertrainer folder within an SD card.

Would you be able to share what the fix for this is?

It is not really a fix but a workaround. The latest version allows you to copy video between LapTimer space on the external car and the LapTimer space on internal memory. As sharing from the external card doesn't work, you can copy / move the video to the internal memory, share it from here and move / copy it back or delete it afterwards.
