I am looking to track data (acceleration, brake, engine, map, etc.) but not only for tracks but also on the road when we do some Rally Roads.
Because we would like to compare the time on several go, including at different dates.

What is the best way to proceed here?

The term 'track' is universal, for example, it is o.k. to define a track from home to work. In case you drive the same route several times, simply define a go and a stop trigger using the Map View or one of the other technics. In case you drive a route one time and want to record data, simply go with the manual mode, i.e. press 'Go', 'Stop', etc.
