Can HLT be run out of sight?

I run in several groups that forbid visible lap timers. By that they mean that the current lap speed and delta from best laps cannot be visible while driving. However these groups do tend allow GoPro or other video and even data acquisition as long as it collects data that is reviewed after a session.
Do any of you run the following setup?:
-GoPro mounted to either windshield or headrest bars
-external GPS (and optionally OBD)
-phone with HLP in a spot where it isn't visible while driving
My specific concerns are that the phone will likely be flat and thus can it be calibrated to detect motion properly in this position as it wouldn't be mounted in the normal straight-up manner.
For those that are mounting GoPros in cars with roll cages - what is your preferred mounting position and brand of mounting hardware? This type of setup would completely forgo trying to get a Ram Mount to mount the phone itself.
