USing GoPro only, limited space on iPhone and iMovie

Hi all (and Harry!),
I bought the Petrolhead edition yesterday, although this may need upgrading based on the responses to my query.
I run a Caterham 7 with Aeroscreen and want to use my GoPro Hero 3. I have an iPhone with limited memory - 16MB and not much space left.
I'm not interested in PiP, or even in recording video on the iPhone. I want to mechanically mount it somehow to the dashboard so I can glance down and check lap time splits and lap differences. Additional background that is relevant are my driving habits - I normally stay out and focus on doing 15-20 laps per stint, and 4 or 5 stints per day. I am concerned that I will run out of space on a track day - I record at 720P @ 60 FPS and generate 2-3 hours of video. Ideally I want to easily identify my best smaller session (for video editing and YouTube upload), and my overall best lap time of the day (which I guess I can see from the per lap data within Harry app).
So here are my questions:
1. Will he PetrolHead edition cater for this? I don't want multiple cameras, just 1 primary - my Go Pro, forward facing and roll bar mounted. I can get to these settings and change them, but they are grouped under a section in the app that implies GP edition only.
2. I don't have much space on my iPhone. I guess I have to (from reading through many other posts) upload my GoPro video to my iPhone to merge the two layers (GoPro video and dashboard/stats layer). Is there a setting where you can record the overlay with the equivalent of a green screen that can be masked out in iMovie or Camtasia? I was hoping that there would be markers on the 2 streams if the two devices were synced by wifi connecting them. I could then merge on my iMac, and never need to worry about shifting massive video files back onto my small iPhone.
All help appreciated, as I want to get this all working as best I can before my next track day in Sept.
