I'd like to know if it is possible to shoot but have the screen in order to follow the stopwatch time.

Hi,

Currently, this kind of "background video recording" is not supported. I plan to have that feature available in version 17.5 (Autumn 2013).

Isn't this possible with use of multicam or GoPro as external camera? Or is the use of a GoPro only possible when the iPhone is also recording?

Yes, MultiCam is active only while LapTimer's Video View is active.
