Calibration

New user here.. I'm a little confused about calibration. I've done as much reading as I can find.
I have HLT on iPhone5 in my corvette. I have a Dual XGPS. I've been experimenting making my own tracks (on the street) just to learn the software and experiment with the HW before I get to the track with it. I will be at Lime Rock in CT next week to kick off our season.
I realize that the software wants to recalibrate the accelerometer when the orientation of the phone is changed. I typically mount the phone in Landscape to my windshield with a RAM Mount. Sometimes, I take the phone out to look at data, etc (while standing still of course) and it tells me to recalibrate. I have to accept as I don't see another way out of this screen. When I set the phone back in the landscape mount, it wants to recalibrate again.... but now, the Acceleration option is not available under MORE (when in Landscape).
1. Why is the Acceleration not available in Landscape?
2. How can I start a Recalibration of the Accelerometer in Landscape?
I know there must be an easy answer to this, but I can't find it.
Also, when I carefully calibrated the device mounted in my car, straight line acceleration still shows down and the the right on the acceleration circles?? Not sure why on this either.
