The G-circle display on the finished video is nice. There are no indications of values, however. Is the first circle, by chance, 0.5 G? And the 2nd circle 1.0 G? Once the little "ball" passes the second circle, it turns yellow. Then when it touches the outer circle of the display, it turns red. What do these mean?

Correct, the white circles mean 0.5G each. So you see 0.5G, 1.0G, and 1.5G

You can configure the thresholds for your car using LapTimer's Expert Settings, or (better) using the Data Recording Map configuration: LapTimer ‣ Lap List ‣ any lap ‣ Preview ‣ press small wrench in the top left ‣ adjust levels to match your car.

Thanks, Harry. Trying to go in through the "Lap List," "Preview" method, I could not find a little wrench in the corner (or anywhere). When I went to "Expert Settings," I saw that the color thresholds were Green: < 1 G; Yellow: 1.00 - 1.25 G; Red: > 1.25 G. These are fine, so I left them alone. I'm using v. 17.0.6.
