I've been using two years a very simple but very effective mount system for my iPod Touch on my soapbox ( more info about it at http://www.zonagravedad.com ):
You just need a rigid plastic back case ( not soft sylicone ) that fits your iPod, iPhone, etc. sold almost anywhere, something like this:
And glue it somewhere behind the steering wheel. It's easy to mount and dismount the iPod, it's small and it is very rigid to improve accelerometer accuracy.
If the desired mounting place is too small or is not flat, just weld a small 6x4 cm steel plate on it, like I did.
Glue the case with commercial 2 component epoxy adhesive ( Araldit, Nural, etc. ). It is important to drill many small 1-2 mm holes on both the plate and the case to improve adhesion ( without them you can separate both parts quite easily ). Put some adhesive tape in the inside part of the case to avoid the epoxy getting in ( the iPod would not fit ).
It works flawlessly even in hard conditions !
