On the 'Performance' screen image on the app store I see a power dial, howver on my instaled app there is no power dial and there seems to be no way (that I can find at any rate) to change the parameters that appear here.

How do I get the power dial?

This view comes in two versions - depending on whether an OBD adapter is connected or not.
LapTimer calculates power from various engine parameters, so this power gauge is visible for OBD only.

Aha, thanks Harry, Bluetooth OBD adapter still on its way to me, thanks again.
