I got the recommended mount and cradle for my iPhone 5 and noticed the picture quality was better than the plastic mount with the spring-loaded cradle, but still considerably worse than I used to get with a rigidly mounted GoPro. Is this the mount or the camera? What can be done? I like being able to run HLT on my iPhone and get post processed videos and I can accept the fuzziness, but I would really like to improve the videos if possible.

It's probably the camera. I think the iPhone 4s was the last iPhone that took decent pictures. It's apparently something in the OS that perhaps improves hand held videos, but makes videos from a stable mount look bad.
