Question about creating a new track

I'm desperately sorry, I didn't get the initial question... I have been looking for missing POIs all the time while the question has been for the track shape in Map View. The later is "works as designed", to get the track recorded overlaid to a map image, you need to export the lap to .KML and watch it in Google Earth. The Map View is used for POI and trigger definitions mainly, not to analyze individual laps. I have an item like this on my todo list, but it has not been requested often so far.

Is it not supposed to show the outline of the track in the map screen or is it only supposed to show the POIs?

Harry: Yes that is the only POI I have for the track. I loaded the Killarney track and the NordschleifeBTG and in the map view I see all the POI but not the track outline.

Yes, the Map View is supposed to show triggers and - more general - POIs, but not a track outline. For track sets with POIs defined for each (or many) corners, the shape becomes visible (kind of a puzzle), but the track shape itself is not displayed. To make it a little more complicated, the Map View displays the last seconds or minutes of fixes received on top - but this is transient information not saved.

The resolution of consumer level GPS, ~2m, is not good enough to be used to compare driving lines. You're only going to see gross errors, which should be obvious from a video. For line analysis, you would probably need 2cm resolution. That costs many thousands of dollars. Possibly Formula 1 teams could afford that sort of thing, but I don't think they use it either. At that level, the drivers know when they're off line by a few centimeters.
