I understand where are you heading, and yes I fully understand the fact about gears and they should go from the highest to the lowest, but this is not this case. I uploaded printcreen from the official SEAT (VW) technical brochure, as you can see even the manufacturer states that the fifth gear is higher than fourth and sixth.
That´s why I´m so confused about it.

The table does not say for which gear which "Grupo reduccion" is used...
From the speeds given in the last row, I'm confident about these:
gear IV: 0,975 x 4,769 (grupo 1)
gear V: 1,030 x 3,444 (grupo 2)
gear VI: 0,825 x 3,444 (grupo 2)
In terms of continuity, I'm sure about gears II and III too:
gear II: 1,833 x 4,769 (grupo 1)
gear III: 1,300 x 4,769 (grupo 1)
What remains is gear I. My guess:
gear I: 2,933 x 4,769 (grupo 1)
