For standard GP length track, 2 or 3 splits are the standard. In case you want to run comparisons by corner, I'd recommend using the Data Recordings graphs. Please check the recent posts on a discussion were to place splits best - we had that within the last week.

LapTimer's overlay is not fully customizable. Things you can change are available as a dialog named "Overlay Configuration" you get when pressing the "Overlay" button in Lap Details.

Yes, as long as GPS speed is lower than 255km/h. OBD speed is limited to that value.

Most probably your car's OBD diagnostic gateway does not provide oil temperature (EOT, 0x015c). Same for my car by the way...
